Citrus Glazed Caribbean Chicken

Inspired by our trips to the Caribbean, this delicious dish brings home a little bit of the tropics for your family to enjoy. A bit spicy and a bit sweet, it's a perfect combination.


Prep Time: 15 Cook Time: 30 Servings: 4


You Will Need:

1 16 oz Jar Andy's Citrus Glaze 2 tsp Salt
4 Boneless Skinless Chicken Breast 1 tsp Pepper
8 Slices of Bacon 8 Slices of Pepper Jack Cheese


To Prepare:

Preheat your grill; or if using the oven, preheat to 375 degrees.

Grill the bacon or cook it stove top until it is slightly crunchy. While the bacon is cooking, sprinkle chicken breasts with salt and pepper on both sides.

Place chicken on grill as prepared above, all it to cook until it has about 4 minutes from completion, while chicken is cooking, put about 1/4 cup of glaze in a bowl.

As chicken nears 4 minutes from completion, glaze lightly on one side with a basting brush. Cook for another 2 minutes.

Place bacon on top of chicken breast, then cover completely with cheese. Allow cheese to melt as the cooking finishes.

Serve over a bed of rice and top with plenty of glaze for dredging your chicken in. The glaze also goes great on rice.
