Caribbean Rice Pudding

Take your rice to a whole new level! This recipe creates a dish that will make you believe your eating in a resort on a tropical island. Serve it with our Citrus Grilled Chicken for the perfect dinner, or alone as a dessert they will beg for! It combines creamy rice with hints of the tropics in ways you have never experienced.

You Will Need:

1/2 cup Andy's Citrus Glaze 2 Cups Minute Made Instant Rice
8 Oz Can Pineapple Tidbits in juice 2/3 cup flake coconut
1 3/4 cup Milk  


To Prepare:

Preheat oven to 375 degrees.

Spread 1/3 cup coconut on a baking sheet and place in the oven, cook until toasted and the tips are golden brown.

Place milk into a sauce pan, and bring to a simmer, add 1/4 cup Andy's Citrus glaze and allow to mix completely. (DO NOT BOIL THE MILK) Add in rice and remove from heat, cover and allow to stand for 5 minutes, or until rice is done.

Add 1/4 cup Andy's Citrus Glaze, 1/3 cup coconut, and drained pineapple tidbits to the rice, mix well and serve in bowls.

Top with toasted coconut for that special touch they will love.
